Back when I was a kid my mom would make a variety of cooked cereals for my family in the winter months. I have to say I was never a fan of the cooked cereals and I remember putting a ton of sugar on the cereal just to make it taste better... not so healthy.
Times have changed, I love oatmeal and I like to make a bowl (minus the ton of sugar) for my breakfast before I go to work, especially when the weather is cold. There is nothing better than a nice hot breakfast to keep you warm when facing the cold weather we have in our neck of the woods.
Since my blogging days I have discovered baked oatmeal and I like to make it on the weekends when there is more time. Over this past weekend I tried one with apples, brown sugar, and cinnamon; something for my guys and me to enjoy. One of the things I loved about this combination was the aroma that it brings to the house.
Apples and cinnamon are a great combination, I did double the amount of cinnamon that it called for in the original recipe and that was a good thing. My guys enjoyed eating it after it cooled down, like a piece of cake and I enjoyed it warm with a little milk over it. No matter how you eat it, I think you will enjoy it.
Baked Apple Oatmeal (Source: adapted from Taste of Home)
Ingredients:
3 cups oats
1/2 cup packed brown sugar
2 teaspoons baking powder
1 tablespoon cinnamon
2 eggs
2 cups milk
2 medium apple, chopped (I left the skin on, but you can peel if you prefer)
Directions:
1. In a large bowl, combine the first six ingredients. Whisk eggs and milk; stir into dry ingredients until blended. Let stand for 5 minutes. Stir in the apples.
2. Transfer to an 8-inch square dish coated with cooking spray. Bake, uncovered, at 350 degrees F for 35-40 minutes or until edges are lightly browned. Serve with additional milk if desired.
I love oatmeal in any form. Your baked version with apples look very delicious.

ReplyDeleteMy husband and sons like a packet of flavored oatmeal for breakfast on a cold morning. I've never tried baked oatmeal but will try your recipe. I bet they'll like it and it's so much healthier than those packets.

ReplyDeleteI used to load up my cereal (cooked and cold both) with way too much sugar. Now I don't use any at all! We do change, don't we? Anyway, this looks wonderful - thanks.
