Hearty Black Bean Soup




I am a big fan when it comes to beans. My favorite I would have to say is the black bean. I have used them so many ways, I love them in soups, salads, and the list goes on.

As I mentioned I love them in soups, I have made many varieties of soup that have this bean in them. My latest creation was this hearty black bean soup and as the name says it all it's very hearty and healthy. It a nice thick soup, you could maybe even call it a chili because of how thick it is.

The soup has a touch of lime juice in it; normally I would not have added the lime juice, because I thought I wouldn't like the flavor.

But after my shrimp tacos from a few posts ago that had lime juice in them, I have found that the lime juice adds a wonderful flavor to foods. As you eat this soup you can taste a touch of lime and it is so good.

Ingredients:
1 tablespoon vegetable oil
1 medium onion, chopped
3 cloves garlic, finely chopped
1 pound lean ground turkey
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
2 cans (15 ounce each) black beans, drained and rinsed
1 14.5 ounce diced tomatoes
1 7 ounce can fire-roasted diced green chiles
2 cups salsa
2 tablespoons fresh lime juice
Directions:
1. In a Dutch oven, heat oil over medium heat. Add onion and garlic. Cook for about 5 minutes or until onion is translucent.
2. Add the turkey; sprinkle with cumin and chili powder. Cook until the turkey is completely browned.
3. Add beans, tomatoes, green chiles, salsa, and lime juice. Season with salt and pepper. Heat to boiling, reduce heat to simmer. Taste soup; add more seasoning as necessary. Simmer up to 30 minutes, stirring occasionally.
