Shrimp Tacos with Avocado Salsa




The weather we had this week was just about unbearable. We had below zero weather what seemed like an eternity and when it did warm up a bit we had freezing rain and snow... when is spring coming?

I needed something to warm up the inners, so I made this shrimp taco recipe with a spicy avocado salsa. The salsa most definitely warms things up a bit. Jalapeno, garlic, and onion spice up this salsa and the avocado adds a nice creamy blend to it all; add some tomato, salt, and lime and you have a very spicy but tasty mix.

 It was a perfect match to my shrimp that was made simple with taco seasoning, garlic, and a little lime juice. When you wrap up the shrimp and salsa in a soft
shell you will forget about the cold weather... the heat of these tacos will definitely warm your inners.




Avocado Salsa (Source: adapted from Once Upon A Chef)
Ingredients:
1/2 medium onion
1 Jalapeno pepper (this salsa is spicy, for less heat add less Jalapeno pepper)
2 garlic cloves, peeled
1 tomato, chopped
1 avocado, seeded and cut into chunks
3/4 teaspoon salt
1 tablespoon lime juice
Directions:
1. Put the onion, Jalapeno pepper, and garlic in a food processor and process until finely chopped. (A mini food processor works great for this).
2. Transfer to a medium bowl; add the chopped tomato, avocado, salt, and lime juice and stir to combine Set aside. If you are not using it right away place plastic wrap over top of bowl and set in refrigerator until you are ready to use it.

Ingredients:
1 pound shelled deveined uncooked shrimp
2 tablespoons taco seasoning mix
3 garlic cloves, minced
3 tablespoons lime juice
2 tablespoons oil
Directions:
1 In a medium bowl combine taco seasoning mix, garlic, and lime juice mix well; add the shrimp and toss to coat.
2. Heat oil in a large skillet over medium-high heat until hot. Add the shrimp mixture; cook and stir until shrimp is pink about 6 to 8 minutes depending on the size of your shrimp.
3. Remove from heat.
4. Add shrimp and avocado salsa onto a soft tortillas shell along with whatever other topping you may want add.

  2. Lovely reading and the tacos with shrimp n avocado salsa sounds mouthwatering..i do agree as u wrote the heat of the food makes us feel warm in the cold cold winter..i love eating such food in the winter specially..where there is much heat ..wonderful isnt it!

  4. Love this Dawn! The shrimp sounds delicious all by itself and so does the salsa. I agree that its good to eat some things that warm you up like this...and not just heavy comfort foods. Stay warm!
