Our son Jon got married to his lovely bride Brianna last Friday. We celebrated the wedding with a lot of family and friends. There were people that came from all over the country that came to help the bride and groom celebrate. It was a wonderful time, but I can't believe that we have another child married.
That meant that our daughter Krista was here for the wedding. She is one of those people that eat healthy and exercises on a regular bases. I have been telling her about the quinoa recipes that I have been making and she has been reading about them on my blog. She had never eaten quinoa, so I had promised her that I would make some quinoa for her while she was home so that she could try it.
Since I enjoyed quinoa for breakfast I decide that I would make some quinoa porridge for the two of us. Also having some very ripe bananas sitting on the kitchen counter, I decided that banana would be a great combination for the quinoa. We both loved the quinoa with the banana, it made for a hearty breakfast on a cold fall morning. After eating her quinoa, Krista mentioned that she would be buying some quinoa on her next trip to the grocery store.
Banana Quinoa Breakfast Porridge (2 servings)
Ingredients:
1/2 cup quinoa
1 cup water
1 mashed banana
1 tablespoon honey
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
4 tablespoons cream
Directions:
1. In a small kettle add the quinoa and water, bring to a boil.
2. Once it is boiling reduce heat to low and continue to cook until the liquid is absorbed, about 15 minutes.
3. Once the liquid has been absorbed keeping the heat on low, add the remaining ingredients. Stir until well combined.
4. When the quinoa is heated with the remaining ingredients divide into 2 bowls and enjoy.
