Zucchini Fritters
If you have zucchini growing in your garden, about now you have it coming out of your ears. Such is the case at our house. So it is always nice to have new recipes to try at this time of the year. I will always have my go to recipes which are my favorites, such as zucchini breads, but it is nice to try new ones too.
This year I have been wanting to try some zucchini fritters. So many of the recipes that I came across sounded kind of bland. I wanted something that would have a little flavor added to them since zucchini doesn't have too much flavor.
So what I ended up doing was combining a few recipes and coming up with something that was more to my taste. I hope if you have zucchini sitting in your garden that this recipe will inspire you to try something new.
Zucchini Fritters
Ingredients:
3 cups zucchini, shredded
1 teaspoon salt or to taste
1 egg
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 cup Italian bread crumbs
Directions:
Shred 3 cups of zucchini. Put zucchini in a bowl sprinkle with about a teaspoon of salt more or less to your taste. Let this sit for 10 minutes. Drain any liquid that has accumulated and place zucchini between paper towels to soak up the remaining liquid. Place zucchini back into the bowl and add the all other ingredients. Toss until well blended. Form into patties, about 6. In the meantime add enough oil to a skillet, so the bottom is well coated. Heat the oil over medium heat. Once the oil is hot add the zucchini fritters and cook fritters for 3 to 4 minutes per side or until nicely browned. Remove from skillet and set up paper towels. Serve immediately.

Unfortunately I do not have zucchini growing in my garden...I wish I had...but I can get some zucchini at the grocery and make this fritters...they sure look delicious.

ReplyDeletePerfect use of these big zucchini in the garden. Maybe even picky teenagers would eat a vegetable when they are fried....
