Last weekend I bought a new Bundt pan. I was excited to get one and even more excited to start baking some delicious cakes with it.
For my first cake I was thinking about a coffee cake, to have for Sunday morning, but then I came across a lemon poppy seed cake. Mike loves lemon poppy seed anything so I wanted to make one for him. I had one problem though, there were no lemons in the house.
I did have plenty of oranges so I decided to go that route. We ended up having some of this lovely cake for Sunday morning after all. Who says you can't eat orange poppy seed cake for Sunday morning? It ended up being a sweet treat that the whole family loved.
Orange Poppy Seed Bundt Cake (Source: Adapted from foodforthesoul.net)
Ingredients:
Cake-
1/2 cup butter, softened
1 cup sugar
3 eggs
2 teaspoons vanilla
1/4 cup sour cream
2 tablespoons orange zest
1/4 cup poppy seeds
2 1/4 cup flour
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup orange juice
Orange cream cheese glaze-
4 ounces cream cheese, room temperature
1/4 cup powder sugar
1 tablespoon orange zest
1/4 to 1/2 cup orange juice
Directions:
Preheat oven to 325 degrees F. Lightly coat a Bundt cake pan with nonstick cooking spray and then dust with flour. Set aside.
2. To prepare the cake, cream the butter and sugar in a large bowl until light and fluffy. Add the eggs, one at a time, mixing well. Mix in the orange zest and poppy seeds.
3. In a medium bowl, whisk together the flour, baking powder, and salt. Add the egg mixture, mixing just until incorporated. Mix in the milk and orange juice. Pour the batter into the prepared pan, and bake for 40- 50 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
4. To prepare the orange cream cheese glaze place cream cheese into a medium mixing bowl, beat until fluffy (about one minute). Add the orange zest and powder sugar and beat until well blended. Add 1/4 cup of orange juice and mix in, add more orange juice to get to the consistency you like. Drizzle over cooled cake.

ReplyDeleteI LOVE Lemon Poppy anything too. I make a Lemon Poppy bread and mini muffins and coffee cake. But I've never thought to switch it up and do Orange Poppy Seed. Can't wait to try this.

ReplyDeleteOh, this is inspired...orange flavor instead of lemon in a poppyseed bundt has my attention immediately. Will give it a try...I have more oranges on hand than we can possibly eat right now for some reason (I bought a big bag at the store and Mark stopped and did the same thing...lol). Looks great!
