Broccoli Bites




There are some picky eaters in our family when it comes to vegetables. You may be familiar with this and have your own picky vegetable eaters.

 I like to have a vegetable with our meals, but a lot of times I am told that they don't care to have any. So I like to find recipes that will appeal to these picky vegetable eaters.

A few weeks ago I found a recipe on Pinterest that involved broccoli, cheese, bread crumbs, and eggs. The picture looked so yummy that it made me think that even my pickiest eaters would love this recipe. I pinned it right away and saved it for a later date. This past weekend I decided to make it since the family was all together.

All the ingredients are mixed together and made into small patties. They are placed in the oven and baked and when they come out they are crispy and so yummy! Even the pickiest vegetables eaters will have a hard time not falling in love with these broccoli bites.

Ingredients:
16 ounce package of frozen broccoli (thawed, drained and chopped into small pieces)
1 1/2 cups shredded cheddar cheese
3 eggs
1 cup Italian Style bread crumbs
Salt and pepper to taste
Directions:
Preheat oven to 375 degrees F. Add all ingredients into a large bowl; mix until well blended. With your hands, form into little patties. Place on a baking sheet that has been sprayed with a non stick spray. Place in the oven and bake for 25, turning the patties after the first 15 minutes.

  2. YUM! Healthy & yummy ! My elder son doesn't like broccoli & I'm always looking for recipes that 'might' make him taste some! LOL This recipe will surely fit the bill. With cheese & Italian Style bread crumbs , how can he say no! ;)

Everyone here loves vegetables and I always thought that was so strange, even when they were little, my boys would eat every vegetable put in front of them, including Brussels sprouts...lol! They will love this recipe...I already pinned it to give a try this weekend when Matt is home. Veggies R Us!! :-)

  6. YUM! We love broccoli in our household. I buy about 4 heads of it a week. I always have it in the house so this would be a perfect meal to whip up midweek!

  10. I like broccoli any way, but this recipe looks terrific. Almost like broccoli fritters! But baked, so healthier. Good stuff - thanks.
