Easy Southwest Soup




On the weekends you can usually find me in the kitchen cooking up a batch of soup for my weekly lunches. Usually I throw in a little of this and a little of that, no real recipe. One thing that I try to do is always make sure that there are lots and lots of vegetables, for a healthy lunch. Last winter I liked making mostly soups that were spicy with a lot of kick to them, but for some reason this year for the most part I have been going for a more mild comfort type soup.

But this past weekend I decide to kick it up a notch and make a soup that had a little heat to it, but not too much. It still included a lot of vegetables as my other soups do. I decide to post this to my blog because the flavor of this soup was so so good. Even my son Adam who usually will not touch soup, told me he had some for his lunch one day and that he really enjoyed it. Then I knew that it was blog worthy recipe.

The soup is packed with a nice variety of vegetable, a little salsa, I even threw in some black beans and just the right amount of spice for a  little bit of kick. It will warm and fill you up all in just one bowl of soup.



Easy Southwest Soup
Ingredients:
1 1/2 pounds chicken cooked and shredded
3 cloves garlic minced
1 large onion chopped
1 tablespoon of olive oil
2 - 14.5 ounce cans chicken broth (low sodium)
1 cup salsa
1 cup frozen corn
15 ounce can black beans (drained and rinsed)
7 ounces can green chiles
14.5 ounce can diced tomatoes
1/2 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Directions:
In a large soup pot or Dutch oven add the olive oil and set heat to medium high. Add your garlic and onion and cook until vegetables are tender about 2 to 3 minutes. Make sure to stir vegetables so that they don't get to brown. To the garlic and onion add your broth and all the rest of the vegetables. Add shredded chicken, cumin, chili powder, salt, and pepper. Bring the soup to a boil and turn down to medium low and simmer for about an hour. This soup can be topped with cheddar cheese and sour cream if desired.

  2. Salsa, Garlic and Black Beans - sounds really good! I like soups a lot, and usually freeze a portion or to to use it as a lunch during the week ;)
