Slow Cooker Beer and Cheese Potato Chowder




I have a new crock pot recently. We had a big project at work that I worked on. After we were finished with all the work my boss gave me a gift card for one of those online gifts reward sites, to say thank you for all the hard work that went in to get the project done. When I went to the website I found that one of the gifts that I could choose from was a 6 quart slow cooker. My old slow cooker was falling apart so I made my choice, and I have a nice new slow cooker.

With that being said, I have been thinking of all the different recipes I would like to make with my new slow cooker. With the fall weather upon us naturally I have been thinking of all the soups that I would like to be making in this new slow cooker. My first soup that I decided upon was this beer and cheese potato chowder. I love potato soups and have made a few varieties, but this is the first one that I have tried that had beer as one of the ingredients.

The beer gave the soup a distinct flavor and was quite tasty. Mike and I both enjoyed it. If you like potato soup and you like beer you might like this soup too.



Slow Cooker Beer and Cheese Potato Chowder (Adapted from bettycrocker.com)
Ingredients:
6 cups peeled and chopped russet potatoes
1 medium onion chopped
1 medium stalk celery chopped
1 medium finely chopped carrot
1 garlic, minced
1/4 teaspoon pepper
1 (14 ounce) can chicken broth
1 (12 ounce) can beer
2 cups shredded cheddar cheese
1/2 cup milk (and substitute whipping cream)
Directions:
1. In a large slow cooker, combine potatoes, onion, celery, carrot, garlic, and pepper; stir gently to mix. Pour broth and beer over vegetables.
2. Cover; cold on low for 6 to 8 hours
3. About 10 minutes before serving add cheese and milk; stir until cheese is melted. Cover; cook an additional 5 minutes or until thoroughly heated.

  8. What I like is that you don't have stop eating to drink a glass of beer -- it's all right there! Handy, handy, handy! And, this is also perfectly suited for solar cooking... just sayin'...
